Chicken Satay

Another delicious super bowl recipe.

Easy to make, you can do most of the prep overnight and bake a little while before the game.

Look at these beauties, yum.

I added chopped red bell peppers on some of the skewers to make them look pretty but you can skip them.

Looks amazing. Tastes even better!

I made these in the oven on broil but you can grill them as well.

Chicken Satay ~ about 20 skewers


  • 2lbs Chicken breasts (2 – 3 large breasts)
  • 1 cup coconut milk
  • 2 tsp curry powder
  • 1/2 tsp black pepper
  • 2 tsp garlic salt
  • 1 tbsp brown sugar
For Sauce~
  • 1/2 cup coconut milk
  • 1 cup chicken stock
  • 1 tsp soy sauce
  • 1/4 cup peanut butter
  • 2 tsp curry powder
  • 1/4 cup brown sugar
  • salt and pepper to taste


  • Cut chicken into strips 3/4 – 1 inch wide and at least 2 inches long
  • Mix all ingredients for the marinade, pour in a ziploc bag.
  • Add chicken strips and marinate overnight or for at least a couple hrs.
  • Preheat oven on broil.
  • Skewer the strips.
  • Layer on a greased sheet or pan.
  • Bake about 10 mins on each side or until chicken is browned.
  • For the sauce, mix sauce ingredients together
  • Cook on medium high until it thickens slightly (dont let it get too thick).
  • Brush some of the peanut sauce on the chicken, serve warm.
  • Enjoy.

*Tip: Because I baked these there were some juices from the chicken which I strained and added to the peanut sauce for extra flavor.

Still working on the rest of my super bowl menu but this will definitely be on it. A little sweet and a little salty … delicious.
