Jollof Rice

A blend of tomato and rice that goes perfect with any dish.

This can be used as a side dish or a main dish if you include chicken, shrimp or beef.  A dish originally from Gambia over the years it has spread to many other parts of West Africa and in Ghana and Nigeria is now one of the most popular dishes. I for one enjoy this very much and make it frequently but for my dear Hubbie it is his absolute favorite! I have made so many variations of this and have found this is the best most delicious way to make this. Next time I will prepare with chicken or beef and post as well. As always it is SPICY so turn down the heat if you do not like it too spicy, Enjoy!!

All you need

With the oil it does vary but I normally would use about 1/4 to 1/2 a cup of olive oil. Heat oil.

Add Sliced Onions

Blend ginger, onions, garlic and habanero peppers

Add to onions and brown.

Add tomatoes you can use tomato paste or fresh blended tomatoes, I normally use crushed or puree but I have been known to use a can of diced tomatoes once in awhile.

Add seasoning whatever you like, I add garlic pepper, ginger, cayenne pepper and sometimes a little nutmeg. I also toss in 2 – 3 whole habanero peppers depending on how much I am making.

Let the sauce cook well about 15 mins, it is a little messy and dangerous at this time so be careful because the tomatoes will splash and it will be extremely hot so to stir please lower temp or turn off completely before stirring. You will know its done when some of the oil is sitting clearly on top of the sauce.

Add rice, I also add chicken bouillon to the rice then add or you can add after you add rice to the pot.

Stir well to coat rice with sauce let cook for about 2 mins stirring frequently

My secret ingredient ~ Chicken Broth, I normally use the broth when I steam chicken to go with it is perfectly fine to use the canned broth.

I cover with foil halfway thru to keep cook the rice perfectly. Do not add too much water or it will be soggy. Total cook time for the rice should be about 20 mins.

Cover rice, stir ever 5 mins then when dry

Done! Slice fresh red and green bell peppers on top and you can also add a boiled egg. Enjoy!
